When using fresh ingredients, Daniel Hewes East Hampton Nutritionist is always conscious about how he can make the most of his food. After chopping off the green stems and leaves of his radishes, Dan Hewes wondered what he could do to salvage the veggie scraps. And then it came to him: he could make a uniquely delicious and totally sustainable pesto recipe! Here’s how you can do the same and embrace your Green Eating / Sustainable Cooking nature:
Ingredients
- pepitas
- garlic clove
- sea salt
- Black pepper
- Lemon juice
- Radish greens
- Basil
- Extra-virgin olive oil
- parmesan cheese
Instructions
Step 1: Combine pepitas, garlic, salt, pepper and lemon juice in a food processor. Pulse until well chopped and consistently combined.
Step 2: With the food processor on a low setting, Daniel Hewes recommends drizzling olive oil, parmesan cheese and radish greens. Turn the food processor off for a moment and do a little taste test, before deciding to add in additional parmesan cheese or olive oil.
